Interesting though - I normally like a bit of heat but either their Jalapeño peppers are getting hotter or I am getting more and more sensitive to them. Went through the same thing with Hops and strong beers about five years ago. I used to drink Stone Brewing's Arrogant Bastard Ale and loved it but now? Too much. Now a Coors Light is more my speed.
I have not noticed any shift in my palate - I love to cook and the stuff I cooked 40 years ago still tastes the same as when I cook it now. A perfectly ripe tomato still tastes as good as I remember it from years ago. I guess that my tongue doesn't go to eleven any more...
