Hmmm... Doing lima bean and bacon as a side dish for the potluck Wednesday so thought I would give it a try. Looks really simple to do and if it delivers on the crispy / melt-in-your-mouth promise, I will add this to my arsenal. The nice thing is that you can do the sous vide process and then freeze the results. Thaw and crisp up when needed.
Going to be using four pounds (dry) of large lima beans and four pounds of bacon. Making a big batch - usually 100+ people at this event.
