And dinnertime - fresh pasta with San Marzano sauce

Posted a few days ago that the Costco Business Center has started carrying authentic San Marzano canned tomatoes. Having my first taste of these tonight. Picked up some fresh pasta and a shallot at the store today. Sauté an ounce of pancetta and the shallot, a bit of garlic (sliced not crushed) and deglaze with a splash of vermouth. Add the tomatoes, reduce for a bit and then some salt and pepper and basil leaves (fresh). Sitting here salivating. Perfect evening for a hearty dinner - maybe even have a glass of wine.
