Yum - I ❤ Tacos

Simple but tasty and filling. Pulled pork, refried beans, fresh avocado, corn salsa,  sweet onion, lettuce and a dab or three of hot sauce on a fresh corn tortilla.

Heaven on a plate... Got enough extras in the fridge for a couple more meals.

Picked up some fresh green beans (California crop) today so two large jars of those are in a quick pickle. Did the whole routine of blanching them first so the texture will be perfect - not tough or stringy.
