Tri-tip was delicious. Cooking sous vide is the way to go for meats. You do not need any equipment to start - I did this for two years with a small six-pack cooler and some zip-lock baggies. You do need a decent probe thermometer ($10 - $30) but you need one anyway for most cooking so you are not getting yet another @#$% kitchen unitasker.

Gravy came out perfect - drippings out of the sous vide bag mixed with some decent boxed beef gravy, some base and reduced lightly. Pinch of flour and butter at the beginning for a roux. Mashed potatoes are to die for - a nice earthy mineral taste to them. Very rich.

Felt like a beer after so went out to one of my favorite locals. Picked up the new Tom Clancy book from the library this morning so started in on that.

Weather is supposed to moderate tomorrow - got some marine air starting to move in. Starting to get significant wildfire threat in Eastern Washington though. Very dry and lots of vegetation what with the damp long spring.

Quick surf and then YouTube and then bed.
