It was good - the noodles have a different mouthfeel but they absorb the flavors of the sauce and we are both stuffed with less than 20 grams of carbohydrates (guessing about 10 from the sauce - put a lot of carrots and 'maters in there). I was Googling around a bit and you can also get "steaks" made of the same stuff - sort of like tofu, it is a chameleon and takes on the flavor of whatever you are cooking with it.
See how our guts are tomorrow and take it from there - the dogs got a bunch of leftovers too so will be monitoring their health as well.
