Heating up some of the left-over spaghetti sauce and getting ready to rinse and cook the carb-free noodles - see what this tastes like.
Getting things ready to make falafel tomorrow - the food trailer has no facilities to deep fry so I will be baking these. I will also try grilling them on a panini press - use an oil spray release so they don't stick. Experimentation is fun especially when there are a lot of options. Made a vegan Tzatziki sauce - it normally uses yogurt and sometimes sour cream. I used a vegan mayonnaise and a bit of cider vinegar to give it some tang. Sitting in the fridge letting the flavors meld. Got dry garbanzo beans soaking.
The sun will be over the yardarm in 50 minutes or so - very glad I bailed on the class. I would not be a happy camper driving into Bellingham right now.
